This makes a large batch of caramel since we go through a lot of caramel at Kith+Kin. Adjust the recipe if you would like a smaller batch.

Ingredients

  • 6 cups Heavy cream
  • 4 cups Brown sugar
  • 4 cups Raw sugar
  • 2 cups Water
  • 8oz or 2 small sticks Butter
  • 4 tsp Vanilla extract
  • 1/8 tsp Salt

Instructions
  1. Add both sugars and water to a saucepan. Stir sugar mixture thoroughly until sugar is dissolved, then place on stove top. Set burner to medium/high heat and a timer for 30 minutes. Bring sugar mixture to boil, and DO NOT STIR the entire time. If stirred during caramelization period, the caramel will harden and ruin the batch.
  2. As sugar is caramelizing, put heavy cream in a measuring cup and warm it up in the microwave. This ensures that the cream doesn’t boil over when added to the caramelized sugar.
  3. At approximately 30 minutes, the sugar should be at 375° degrees, the proper caramelized point. Remove the sauce pan from the burner. Now, slowly add the WARM heavy cream while stirring. Then, add the butter, salt and vanilla. Stir thoroughly until everything is completely mixed.
