Branding used to be a day-long affair for the Ross family.
Dinner (or lunch for this city girl) was something to look forward to. One of the staples of this meal was my mother-in-law’s Roundup Bean Casserole. It can be the main entree of a meal or a hearty side dish.
Ingredients
- 1 lb. Ground beef
- 1 can Kidney beans (drained)
- 1 can Butter beans (drained)
- 1 can Pork and beans
- ½ Cup Ketchup
- ¾ Cup Brown sugar
- 1 tsp Dry mustard
- 2 Tbsp Apple cider vinegar
- Chopped onion and bacon slices (to your preference)
Instructions
- Brown beef, seasoning with salt and pepper. Drain any grease.
- Combine all ingredients in a 13×9 or 2 quart casserole dish. Bacon can be cut up and mixed in or slices laid on top of the casserole.
- Bake uncovered for 1 hour or until bubbly at 350°.
