A fantastic summer recipe for travel is a hearty and portable salad in a jar.

Here’s a simple yet delicious recipe:
Ingredients
  • 1 cup Cooked quinoa
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 Bell pepper, diced
  • 1/4 cup Red onion, finely chopped
  • 1/4 cup Feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 TBS Fresh basil, chopped
  • 2 TBS Extra virgin olive oil
  • 1 TBS Balsamic vinegar
  • Salt and pepper to taste
Instructions
  1. Cook the quinoa according to package instructions and let it cool completely.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  3. Adjust to taste.
  4. In clean, dry mason jars, layer the ingredients in the following order: dressing, quinoa, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, kalamata olives, and basil.
  5. Seal the jars tightly and store them in the refrigerator until you’re ready to travel.
  6. When you’re ready to eat, simply shake the jar to distribute the dressing, and enjoy your delicious and nutritious salad on the go!
